*It’s All About The Tea*
Use 1 teaspoon of leaves per cup.
Blooming teas consist of a bundle of dried leaves wrapped around one or more dried flowers. When steeped, the bundle expands and unfurls in a process that emulates a blooming flower. Blooming tea is usually served in glass containers so the blooming effect is seen. The blooms can be reused up to 5 times without becoming bitter.

Green tea undergoes only minimal oxidation during processing, making it a rich source of anti-oxidants and other beneficial compounds.
Herbal teas have been consumed nearly as long as written history has recorded. The wide array of fruits and herbs delight the senses while the healing properties have been lauded by traditional medicine for centuries.
Honeybush is a sibling of Rooibos, cultivated in South Africa’s Eastern Cape region. Its flowers smell of honey, hence the sweet name. The taste is similar to that of rooibos, but just a little sweeter. It is also naturally caffeine free.
Matcha (pronounced Mot-Cha)
Matcha, the focal point of the Japanese Tea Ceremony, is a fine powder made by grinding green tea leaves. Only the finest, young, shade-grown gyokuro tea leaves are used to create matcha. The leaves are plucked and laid out flat to dry. Veins are removed and the leaves, now called tencha, are carefully ground in granite mills until they become the precious powder.
Easy preparation is achieved by placing one half to 1 teaspoon of matcha per cup (or to taste) in a cup, adding a few drops of hot water (160-180F) and stirring until a paste forms. Add the rest of the water and stir.
This tea contains a high level of caffeine. Also contains a high level of anti-oxidants.
Mate (pronounced Mah-Tay) A species of holly, the leaves and twigs of the South American Yerba Mate plant have long been enjoyed as a steeped beverage.
Oolong teas are produced through a unique process what withers the plant in the sunlight and oxidation before curling and twisting the leaves.
Pu-ehr (sounds like poor) tea is microbially fermented and aged. It is a black tea that is dried and rolled.
Rooibos (sounds like roy-bose) hails from South Africa. It is a red bush tea that is caffeine free and produces a sweet flavorful cup. It’s also known for high mineral content and a wide array of anti-oxidants.
White tea is the most subtle of all tea types, using the finest leaves from each tea bush with a minimal amount of processing. It contains the highest amount of antioxidants and shares many chemical compounds with green tea.

How to Brew the Perfect Cup of Tea
*Bring water to almost boiling. Pour some of the boiling water into your cup or teapot. Let it sit for a minute. This warms your cup or teapot and prevents your tea from cooling too quickly (which in turn aids the effectiveness of the infusion process.) Dump the water out.
By the cup:
Place a teaspoon of tea leaves into an infuser. Place the infuser into the cup. Pour the hot water over the tea leaves.
By the teapot:
Place tea leaves into an infuser. An average teapot is 32 ounces and would need four to six teaspoons of tea leaves. Place the infuser into the teapot. Pour the hot water over the tea leaves. Place the lid on the teapot.
*Set a timer based on the type of tea you are using. Guidelines are listed on our tea menu as a starting point. **Caution: NEVER over-brew green teas. They become bitter if brewed too long. **
*When your timer goes off, remove the infuser and enjoy a hot cuppa. Add milk or sugar, if desired.
*You may want to experiment by varying brewing times with your taste buds guiding you. If you want a stronger tea, add more tea leaves. Don’t just add extra time because you risk getting a bitter tea.
*If brewing iced tea, double the amount of tea leaves per cup. Add water to your pitcher, refrigerate overnight. In the morning, remove the infuser. Enjoy.
Other Tea Tidbits
To maintain the highest quality: Store teas in an airtight container. Keep them out of direct sunlight.
Teas generally have a shelf life of 5 years. A few are even longer.
If you don’t like a tea, add some dried fruits or nuts to the brew. We’re looking at you apple chunks, dried berries and pecan pieces! Flower petals add variety. Think rose, lavender, marigold, and butterfly pea.
Mix several teas together. White, green, red, and black teas blend well.
Like sweetness? Add honey or maple syrup. Calorie-free option: add honeybush or rooibos leaves to the blend.
Used tea leaves can be composted.
You can substitute tea for the liquid in some recipes. Chai cake frosting anyone?
